AnthocyaninsAnthocyanins are antioxidant flavonoid plant pigments known for their anti-inflammatory properties. Plants with extremely high anthocyanin are known as ornamental plants. Anthocyanins are water-soluble pigments that range from red to blue, according to pH. They provide color in flowers, fruits, stems, leaves and roots.
Anthocyanins relax blood vessels, stabilize capillary walls and reduce allergic reactions. Purple cabbage, cherries, grapes, beets, blueberries and raspberries receive their color from anthocyanins.
