Denatured FoodsDenatured foods are foods that have been structurally altered in some way, using strong acids, organic solvents or inorganic salts. Cooking foods often alters the proteins, making it denatured. For instance, cooking meat causes it to become firm and cooking egg whites cause them to become solid and white.
Denaturation of foods causes a major change in nucleic acid and protein structures, resulting in disruption of cell activity and sometimes cell death. Many of the processed foods that are sold in supermarkets today have been denatured - stripped of their essential vitamins and minerals through harsh processing and restructuring.
